Upgrade storybook-addon-mock or change the way we mock HTTP calls

The storybook-addon-mock plugin is not compatible with Storybook 8. It causes some of our stories not to work correctly. Unfortunately, the plugin is currently not actively maintained.

We need to wait for a patch or migrate to another mocking approach.
