Stork installation should be clear that docker is an optional dependency

As reported here, the apparent Docker and Java dependency is a problem to some. We should clarify the docs that Docker is useful, but optional dependency.

Also, we can add a note that Java is only temporary needed and will likely not be needed in the future. See #182.
