Document alerting using Prometheus

We have the capability, but it's not well documented. We should provide a description of:

• how to set it up, using either prometheus or grafana (or both)
• give some examples of alerts (here's a good inspiration for useful prometheus alerts - https://github.com/wkumari/prometheus-example-queries)

This is very likely a documentation only ticket.
